Peach Recipes
Some of our Family Favorites from Rendleman Orchards! |

| Peach Dumplings |
Pastry for 9" two-crust pie
4 3" to 3-1/2" peaches (Peel, halve and remove seed)
| Filling: |
1/3 to 1/2 Cup sugar, depending on the sweetness of peaches
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg (optional)
1 Tablespoon butter |
| Syrup: |
2/3 to 3/4 Cup sugar
1-1/2 Cup water
2 Tablespoons butter
1/2 teaspoon cinnamon |
Preheat oven to 425 degrees. Divide pastry into 4 parts and roll out
into 7" squares. Boil syrup for 3 minutes. Place peach
on each square of pastry. Fill with filling mixture and dot
with butter.
Bring opposite corners of pastry up over peaches, overlap, moisten
and seal. Lift carefully and place evenly spaced in a 9x9 baking
dish. Pour hot syrup around dumplings.
Bake immediately for 40 to 45 minutes or until crust is nicely
browned and peaches are tender when pierced with fork or toothpick.
Serve warm with the syrup and cream.

| Aunt Wesie's Fresh Peach Cobbler |
| We remember back 50+ years ago when Aunt Wesie (Eloise) came to
visit from North Louisiana and would make this easy cobbler
for us. It has been one of our favorites ever since. Best if
eaten the same day it is baked. |
| Arrange in a square pan: |
3 Cups cut up fresh Rendleman Orchards peaches
Enough water to cover bottom of pan |

| Sprinkle with a mixture of: |
2 Tablespoon flour |
2/3 Cup sugar |
| 1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
| |
| Dot with: |
2 Tablespoons butter |
| |
Batter Topping Recipe:
(Sift together in bowl) |
2 Tablespoon sugar |
1 Cup flour |
| 1/2 teaspoon salt |
1 ½ teaspoon baking powder |
| |
| Then add to bowl: |
3 Tablespoons milk |
1 egg |
| 1/3 Cup soft margerine or cooking oil |
| |
| Stir
with a fork until thoroughly blended. Drop by spoonfuls
over the fruit. If desired, dough may be spread with a
spatula to cover the surface of the fruit. Bake 25 to
30 minutes in 350 degree oven. |

| Peach Upside-Down Cake |
| So yummy served warmed with ice cream or Cool Whip® topping! |
1/4 Cup melted butter or margerine
1/2 Cup packed brown sugar
1-1/2 to 2 Cups sliced Rendleman Orchards peaches
1-1/4 Cup sifted flour
1-1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 Cup sugar
1/2 Cup unmelted butter or margerine
1 egg
1 teaspoon vanilla
1/2 Cup milk |
In a 9" round baking pan, mix together melted butter
and brown sugar; spread evenly in pan. Arrange peaches
over brown sugar mixture; set aside.
Sift together flour, baking soda and salt; set aside.
In large bowl with mixer at medium speed, beat together
sugar and unmelted butter for 2 minutes. Add egg and
vanilla; beat well.
Reduce speed to low. Add dry ingredients altenately
with milk, beating well after each addition. Spread
batter over peaches in pan.
Bake in 350 degree oven for 50 to 55 minutes or until
toothpick inserted in center comes out clean.
Cool on rack 5 minutes. Invert onto serving plate. Remove
pan and serve warm. Makes 8 servings.
